Tomato with Cheese Appetizer

This is inspired from something I had tried before while on vacation.  My cousins took me to Atlantic City, and we had a pre-mothers’ day celebration at The Old Homestead Steakhouse.

I loved the appetizer that my nephew ordered for us, and because my husband loves big juicy tomotoes, it tried replicating it at home.  However, while the original recipe called for mozarella cheese which is too expensive in this part of the globe, I had to improvise and used my current favorite cheese.  Of course, it wasn’t my favorite cheese back then.  I just scoured the supermarket ref for a close alternative.

It is as what it looks like.  Cheese on top of a slice of fresh tomato, drizzled with olive oil.  I added some chopped basil  just for the sake of aesthetics.  It was good though.  Not the same as the original, but good in its own way.  Pardon the way I sliced the cheese, I can only do so much considering its original shape. 🙂

This was served as an appetizer to my Eggplant Lasagna dish.
